Roasted Red Pepper Bruschetta

Serves 6 people
Ingredients
- 1 7 oz. jar roasted red peppers, drained/chopped
- 1 clove garlic, minced
- 1 T. olive oil
- 1 tsp lemon juice
- 1/4 c. green onion, chopped
- 1 4oz. pkg. Feta cheese, crumbled
- 1 loaf French baguette slices, 1/4 in. thick
Directions

Mix peppers, garlic, olive oil, lemon juice, onion, feta cheese and set aside.

Brush baguette slices lightly with olive oil; place on cookies sheet.

Broil on each side until lightly toasted.

Top each toast slice with about 1 T. of red pepper mixture.
