Ingredients
- 1 19 oz can garbanzo beans, drained and rinsed
- 1 cup diced cucumber, with peel
- 3 medium plum tomatoes, diced
- 1/4 cups finely chopped red onion
- 1/2 cup diced green pepper
- 1/4 cup sliced ripe olives
- 2 tbsp 1% buttermilk
- 1 tsp olive oil
- 1 tsp oregano
- 1 tbsp chopped fresh parsley
- 1/2 cup light feta cheese, crumbled
- freshly ground pepper
- 1 tsp grated lemon peel (or juice)
- 1 garlic clove, minced
Directions

Combine first 6 ingredients in large bowl.

Process all 8 ingredients in blender until quite smooth. Makes 2/3 cup dressing. Add to vegetables. Toss to coat. Chill for at least 1 to 2 hours to blend flavours.
