Ingredients
- 2 tbsp tequila
- Zest of one lime
- 2 tbsp lime juice
- 3 cloves of garlic, minced
- 1 small onion, grated
- 1 jalapeno or serrano chile, chopped fine )
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp coriander
- 3 tbsp chopped fresh cilantro
- Salt and pepper to taste
- 2 boneless skinless chicken breasts, cut up into 1 inch pieces
Directions

Sprinkle chicken with salt and pepper. Combine the rest of the ingredients in a large bowl or resealable plastic bag – it will be a cross between a liquid and a paste. Add chicken to bowl or bag, and toss to coat, rubbing the paste into the meat. Allow to marinate in the refrigerator for between 30 minutes and 1 hour, removing it from the refrigerator at least ten minutes before cooking. Grill, broil or sauté as desired. Serve with lime wedges.
