Green Bean Bhaji

Ingredients
- 2 Tbsp light oil
- 1 tsp cumin seed
- 1 tsp black mustard seed
- 1 large onion, chopped
- 3 cups of green beans, chopped
- 1/4 cup dried grated coconut
- Small handful of cashew nuts
- 1 good sized red or yellow pepper, sliced
- 2 Tbsp Punjabi Garam Masala
- 1/4 cup water or stock
- salt to taste
Directions

Cook cumin and mustard seeds in oil at medium high heat until seeds crackle.

Add onion and saute until translucent.

Add chopped green beans, peppers, coconut and small palm full of whole cashews, with salt to taste.

Add a quarter cup of water, cover and cook until tender, sitrring in the Punjabi Garam Masala to coat the veggies, a few minutes before they are done.

To make hotter, add chilies and ginger in the beginning.

Serve with rice or as a side dish.
