Grilled peach, bacon and arugula salad

(from largomason’s recipe box)

Ingredients

  • 4 peaches
  • 150gr. thinly sliced bacon
  • 250gr. arugula
  • 100gr. feta cheese
  • Dressing:
  • 1 tbs. balsamic vinegar
  • 2 tbs. lemon juice
  • 1/2 tsp. sugar (to taste)
  • 2 tbs. olive oil (vegetable oil)
  • salt

Directions

  1. Make a shallow X cut on the bottom of each peach

  2. Plunge peaches into boiling water for 30 sec, and then immediately plunge them into the iced cold water

  3. Peel and then slice each peach into 4-6 segments. Wrap each segment with a slice of bacon and grill the peach segments for 5-7 minutes turning it once.

  4. Combine all the ingredients for the dressing and whisk well.

  5. Arrange grilled peach slices on a platter. Garnish with arugula. Sprinkle dressing over the peaches and arugula. Top with crumbled feta cheese.
