Pasta with Prosciutto and Peas

Serves 4 people
Ingredients
- Salt/pepper
- 12 oz Fettuccine
- 1 T butter
- 1 large shallot, finely chopped (1/4 C)
- 1/4 C heavy cream
- 10 oz frozen peas
- 4 oz prosciutto, halved & sliced (1 C)
- 1 T finely grated lemon zest
- 1 T fresh lemon juice
- 1/2 C finely grated Parm + more for serving
Directions

Cook pasta. Reserve 1 C of pasta water.

In a large skillet, melt butter over medium-low heat, add the shallot and cook until softened, about 5 minutes.

Add cream, peas, and prosciutto; bring to a gentle simmer over medium heat. Simmer until the peas are heated through, 3-4 minutes.

Stir in the lemon zest & juice.

Pour the sauce over the pasta; add the parm and season with salt & pepper.

Add enough of the reserved water to thin sauce as desired.

Serve!
