Mustard Roasted Potatos

Ingredients

  • 2 1/2 lbs small red potatoes
  • 2 yellow onions
  • 3 T olive oil
  • 2 T whole grain mustard
  • kosher salt
  • 1 t freshly ground black pepper
  • 1/4 cup chopped fresh flat leaf parsley

Directions

  1. preheat oven to 425

  2. cut potatoes in halves or quarters

  3. place them on a sheet pan

  4. remove the ends of the onions, peel them, cut them in 1/2

  5. slice onions crosswise in 1/4 inch slices to make 1/2 rounds

  6. toss onions and potatoes together on pan

  7. add olive oil, mustard, 2 t of salt, and pepper and toss them all together on pan

  8. bake 50 minutes-1 hour

  9. until potatoes lightly browned on outside

  10. toss during baking for even cooking

  11. serve hot sprinkled with chopped parsley and a little more salt
