Blueberry Muffins

Ingredients
- 2 cups sifted regular flour
- 1/3 cup sugar
- 3 tsp baking powder
- 1 tsp salt
- 1 egg, well beaten
- 1 cup milk
- 4 tbsp butter or margerine
- 1 cup frozen unsweetened blueberries
- 1 tbsp sugar
- 1 tsp lemon rind
Directions

Sift flour, the 1/3 c sugar, baking powder, and salt into a large bowl.

Mix egg, milk, and butter/margerine in small bowl; add all at once to flour mixture.

Stir lightly with a fork just until liquid is absorbed (batter will be lumpy)

Fold in blueberries

Spoon into greased, medium-sized muffin pan, filling each 2/3 full. Sprinkle with mixture of lemon rind and 1 tbsp sugar.

Bake in hot oven – 425F – for 20 minutes or until golden. Serve hot.
