Cheese Eggplant Spread

Ingredients
- 1/4 head of cabbage, chopped
- 1 green pepper, chopped
- 1/4 cup olive oil
- 2 large eggplants, peeled and cubed
- 1 cup toasted hazelnuts, chopped
- 1 teaspoon salt or to taste
- 1 cup grated mild cheddar cheese
Directions

Saute the cabbage and green peppers in olive oil.

Add the eggplant, salt, and hazelnuts. Cover and simmer gently until soft.

Cool for a minute or two and crush slightly while mixing in the grated cheese.
