Ingredients
- 4 1/2 oz tomato paste
- 1/4 cup dry red wine
- 1/4 cup water
- 2 cloves garlic, minced
- 1/4 tsp dried basil
- 1/8 tsp cumin
- 1/8 tsp paprika
- 1/8 tsp dried oregano
- 1/8 tsp salt
- 3/4 lb grund chicken
- 3/4 cup rolled oats
- 1 large egg
- 1/2 cup zucchini

Preheat oven to 350F.

Combine tomato paste, wine, water, garlic, basil, cumin, paprika, oregano and salt in small saucepan. Bring to a boil then reduce heat to low. Simmer, uncovered, for 15 mins. Set aside.

Combine ground chicken, oats, egg, zucchini and 1/4 cup tomato mixture in a large bowl. Mix well. Shape into a loaf and place in an ungreased loaf pan.

Bake for 45 mins and discard drippings.

Pour 1/4 cup of remaining tomato mixture over the top and bake for 15 mins longer.

Transfer to platter, let cool 10 mins before slicing.
