Chunky Fruit & Nut Chocolate Bark

Ingredients
- 1 1/2 pounds bittersweet chocolate, chopped
- 2/3 cup dried cherries
- 2/3 cup raisins
- 2/3 cup salted cocktail peanuts
- 2/3 cup roasted cashews
Directions

Line a cookie sheet with foil and lightly oil.

Melt the chocolate in a double boiler or microwave until smooth.

Remove chocolate from the heat and stir in the dried fruit and nuts. Spread evenly on the prepared cookie sheet and refrigerate until very firm.

Break into pieces or cut with a knife if a more uniform candy is desired.

To store, keep tightly wrapped in the refrigerator for several weeks.

Makes about 2 pounds.
