- 4 Cups Of Cubed Watermelon Rind
- 1/4 Cup Of Kosher Salt
- 1 Large Fresh Lemon Peel
- 1 Quart Of Bottled Water
- 1 1/4 Cup Of Bottled Water
- 2 Cups Of White C&H Sugar

To begin this watermelon rind candy recipe, you will first need to take out a boiling pot, and add in your cubed watermelon rind. Cover the rind with water and boil for five minutes over high heat. Once you are done drain all of the water from the pot. When your watermelon rind has cooled, cover it with a brine consisting of one quart of bottled water, and the kosher salt. Set it aside for six hours to soak. Once the six hours has expired, drain and rinse your watermelon rind using a metal strainer. Moving along, next add the rind into a saucepan and cover with fresh water. Let the rind simmer until it is translucent and tender. Again drain the water and let the rind cool. Next take out a new saucepan, and add in two cups of white sugar, one and one quarter cups of water, and the whole lemon peel. Cook these ingredients until droplets form a soft ball in cold water. At this point add in the cooked watermelon rind, and rapidly stir it to prevent it from burning. You will want to cook the rind in this saucepan until a thick stringy syrup begins to form. Once you are done remove the rind, discard the lemon peel, and drain the pan. Using a fresh bowl, add in some white sugar for a candy coating. Roll each watermelon rind piece in the sugar until adequately covered. Shake off any excess sugar, and then lay the rinds on a cookie sheet to cool and dry.
