Meat Loaf with Roasted Vegetables

Serves 4 people

Ingredients

  • 1/4-cup plain dry bread crumbs
  • 1/4-cup fat-free milk
  • 1 egg
  • 1-lb ground beef or chicken
  • 3 finely chopped celery
  • 1/2-tsp dried oregano
  • 1/4-tsp ground sage
  • 1/4-tsp salt
  • 1/8-tsp pepper

Directions

  1. In a medium bowl combine bread crumbs, milk, and egg.

  2. Add beef/chicken, onions, celery, oregano, sage, salt and pepper to the above mix. Mix well.

  3. In a shallow baking dish pat meat mixture into a 7X3X2" loaf

  4. If desired arrange vegetables (potatoes, carrots, onions) around loaf. Spray vegetables with vege spray.

  5. Bake uncovered for 1 hour at 350 degrees, stirring vegetables once.
