O’Charley’s Baked Potato Soup

Ingredients
- 3 lbs unpeeled red potatoes, cubed
- 1/4 c butter, melted
- 1/4 c flour
- 8c half & half
- 5c cheddar cheese soup
- couple dashes white pepper
- couple shakes garlic powder
- 1t hot pepper sauce
- 1/2 lb bacon, fried crisp
- 1c cheddar cheese, shredded
- 1/2 c fresh chives
- 1/2 c fresh parsley
Directions

Boil potatoes for 10 minutes, until cooked

In another pan, combine butter and flour and cook until smooth (medium heat)

Gradually add half and half and cook until thickened

Add cheddar cheese soup

Drain potatoes and add to soup mix

Cover and cook 30 minutes over low heat

Sprinkle with bacon, cheese, chives and parsley
