Ingredients
- 4 salmon steaks 1" thick
- 15-oz can mandarin oranges in light syrup, drained and chopped
- 14-oz can zesty diced tomatoes with chilies drained
- juice of 1 lime
- 1/2 sweet onion
- 2-tbsp chopped fresh parsely
- 1-tbsp virgin olive oil
- 1/4-tspsalt
- 1/4-tsp ground black pepper
Directions

In a bowl, mix everything but the salmon, salt, and pepper. Let sit for 30 min.

Start grill to med-hot. Coat salmon with cooking spray and rub in the salt and pepper.

Grill for about 5 min. per side, or until flaks.

Serve with orange-tomato mix.
