Audrey’s Applesauce Muffins

Healthy Muffins!!! Recipe made as written makes 12 large-ish muffins or 18 regular size. I always double this recipe so I can freeze some. If I freeze any, I omit the topping before baking.

Ingredients
- 3/4 C oats, regular and uncooked
- 3/4 C oats, regular and uncooked, coarse ground
- 1 1/4 C applesauce, natural -no sugar added
- 1/2 C milk
- 3/4 C flour
- 1/2 C whole wheat flour
- 3/4 t cinnamon
- 1/2 t allspice
- 1/2 t cloves
- 3/4 t salt
- 1 t baking powder
- 1/2 t baking soda
- 2/3 C brown sugar
- 1/4 oil
- 2 eggs, beaten slightly
- Optional Topping
- 1/4 C oats, regular uncooked
- 1 T brown sugar
- 1/8 t cinnamon
- 1 T butter, melted
Directions

In a large mixing bowl combine oats, applesauce and milk. Stir to moisten all the oats; set aside to soak.

In a medium mixing bowl combine the dry ingredients: flours, spices, salt, baking powder and soda.

To the soaked oats mixture add the brown sugar, oil, and beaten eggs. Stir to combine.

Add dry ingredients stirring only enough to combine wet and dry. Don’t overstir.

Spray/grease muffin tins; fill 2/3 -3/4 full. Optional topping -sprinkle on before baking. Bake @ 400 degrees F for 15 – 20 minutes (check earlier, depending on your oven.)

Remove from oven and place tin(s) on cooling racks. You can take a knife or similar utensil and lift each muffin to its side to cool. This prevents them from sweating as they cool and making a soggy crust.
