Shelly’s Chicken Taco Bake

Ingredients
- 1 cup cooked Chicken, shredded (great use for leftover rotisserie)
- 1/2 cup Colby-Jack Cheese, shredded
- 5 Eggs, beaten
- 1/2 cup Tomatoes, chopped
- 4 Green Onions, diced
- 1 Mild Green Chili, diced
- 2 Tablespoons Cilantro, chopped, fresh
- 1/2 teaspoon Southwest Seasoning
- 1/4 teaspoon Cumin
- a few twists of Black Pepper
- 1/2 teaspoon Kosher Salt
Directions

Mix all ingredients together and pour into a Pyrex casserole dish or deep dish pie plate that has been sprayed with non-stick spray.
