Ingredients

  • 1 cup cooked Chicken, shredded (great use for leftover rotisserie)
  • 1/2 cup Colby-Jack Cheese, shredded
  • 5 Eggs, beaten
  • 1/2 cup Tomatoes, chopped
  • 4 Green Onions, diced
  • 1 Mild Green Chili, diced
  • 2 Tablespoons Cilantro, chopped, fresh
  • 1/2 teaspoon Southwest Seasoning
  • 1/4 teaspoon Cumin
  • a few twists of Black Pepper
  • 1/2 teaspoon Kosher Salt

Directions

  1. Mix all ingredients together and pour into a Pyrex casserole dish or deep dish pie plate that has been sprayed with non-stick spray.

  2. for 30 minutes at 350.
