MY pumpkin PIE

Ingredients

  • 30 oz can pure pumpkin (Apx 3 cups)
  • 1-1/4 cup sugar or SPLENDA will work
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 tsp pumpkin pie spice (not needed if you add cloves and nutmeg)
  • 4 large eggs
  • 1/2 can Evaporated milk
  • My Mom never liked the cloves or nutmeg so I don't add them either.
  • YOU can add:
  • ....1 tsp ground Ginger
  • ....1/2 tsp ground cloves
  • 2-unbaked pie shells deep-dish
  • I sometimes add 1/2 can easy Pumpkin Pie MIX for more volume (taste of cloves)
  • I sometimes add some chopped walnut meats or raisins or both

Directions

  1. beat Pumpkin and eggs in large bowl.

  2. Add dry ingredients

  3. gradually add evaporated milk

  4. MAKES 2 PIES

  5. pour into pie shells

  6. Bake 30 minutes at 425 then lower to 400 or bake longer if at 350

  7. The pie is done when a toothpick or knife in inserted in the middle and comes out clean.

  8. If you add the half can of pie mix may need to cook longer to 60+ minutes
