Egg Curry

Serves 4 people

Ingredients

  • 1 med onion, cubed
  • 1 green chili
  • 1/2 inch Indian cinnamon
  • 2 T Saar Pudi
  • 2 T dried coconut
  • 4-6 black peppercorns
  • 1/4 t cumin seeds
  • 6-8 cilantro stalks
  • 1 tomato, diced
  • 8 eggs, hard boiled
  • 1 T vegetable oil
  • Salt to taste

Directions

  1. Dry roast all of the above ingredients in a pan over medium heat, except for tomato and eggs.

  2. Blend roasted ingredients until smooth, adding water as necessary.

  3. Peel eggs and pierce with fork several times so curry masala can flavor the eggs.

  4. In a medium size pot, heat oil and add tomato until softened.

  5. Add blended curry masala to pot. Season with salt to taste.

  6. Add eggs and bring to boil. Reduce heat and simmer until curry is the desired thickness.
