Pork Fry

My butcher does all the fancy cutting for me. If they will not cut the bone for you, do it at home with a butcher knife (careful!) or have them remove the meat off the bones but reserve the bones for you. Place meatless bones into pan whole. The bones are needed for flavor, and taste really yummy.

Ingredients
- 1 med onion, quarter inch slices
- 1 1/2 inch ginger, chopped and pounded in mortar pestle
- 3-4 garlic cloves, chopped and pounded in m/p
- 4 jalepenos, cut into long strips
- 4 T coriander powder
- 1 T cumin powder
- 1/2 T red chili powder
- 1 t turmeric powder
- 1 t oil, optional
- Salt to taste, appr. 2 T
- 2 limes
- 10 cilantro stalks, chopped
- 3 bone-in 1.5" thick center-cut pork chops, cubed into 1" pieces.
Directions

Place pork cubes in large pot over medium heat with oil*. Allow pork to whiten on sides, 5 min.

Add onion, jalepenos, garlic and ginger to pot. Salt and stir. Reduce heat to med-lo and cover.

Meanwhile, dry roast the coriander and cumin until fragrant, 5 min.

Add coriander, cumin, red chili, turmeric to pot. Stir.

Cover and continue cooking for about 30-40 min over lo or med-lo heat. Stir occasionally.

In last 5 min of cooking, add juice of one lime and cilantro. Taste to ensure proper flavor.

Serve over rice with lime wedges.
