Vangibaath – Bell Pepper Rice

Ingredients
- 1/4 c dill leaves
- 1 1/4 c sliced green beans (frozen french cut beans work)
- 1 bell pepper, cubed
- 1 c rice, cooked
- 2 T oil
- 1/4 t mustard seeds
- 1 red chili
- 2 dashes asafetida (hingu)
- 1 stalk curry leaves (carbensapu)
- 1/4 t turmeric powder
- 1/2 t Tamcon tamarind sauce
- 1/4 T salt
- 2 T palya pudi
- 1/2 lime, juiced
Directions

Ogerne: Heat oil in saute pan over med-hi heat. Add mustard seeds and allow to pop. Reduce heat to med-lo add red chili, asafetida and curry leaves.

Add green beans, then bell pepper. Stir and cook for 5 min. Add dill and finish cooking vegetables.

Add Tamcon, salt and palya pudi. Mix well. Turn off heat.

Add rice and lime juice mix carefully so as not to break grains.
