Apple Pancakes

Ingredients
- 2 eggs
- 2 cups all-purpose flour, sifted
- 1/3 cup plus 2 tablespoon sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnmon
- 1 teaspoon ground ginger
- 1/4 teaspoon freshly grated nutmeg
- 2 cups plus 2 tablespoons buttermilk
- 4 tablespoons (1/2 stick) unsalted butter, melted
- 2 teaspoons vanilla extract
- 2 peeled Granny Smith apples, 1 cored and finely grated, 1 thinly sliced on a mandoline
Directions

In a bowl, using an electric mixer, beat eggs on medium speed until frothy.

Add flour, 1/3 cup sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, buttermilk, butter, and vanilla.

Stir just until smooth.

Stir in grated apple.

Heat a griddle over medium high heat.

Lightly spray with nonstick cooking spray.

For each pancake, sprinkle 1/2 teaspoon sugar on 1 apple slice; place on griddle. Using batter dispenser, dispense about 1/3 cup batter on top of apple slice.

Cook until bubbles form on top, about 2 minutes.

Flip pancakes; cook about 2 minutes more.
