Fluffy Key Lime Pie

Ingredients

  • 1 cup original Bisquick
  • 1/4 cup margarine or butter, softened
  • 2 tablespoons boiling water
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup Key lime juice or regular lime juice
  • 1 container (8 ounces) frozen whipped topping, thawed
  • 1 tablespoon grated lime peel
  • Lime slices, if desired

Directions

  1. Heat oven to 400 degrees.

  2. Mix Bisquick and margarine in medium bowl.

  3. Add boiling water; stir vigorously until very soft dough forms.

  4. Press dough firmly in pie plate, 9 by 1 1/4 inches, bringing dough onto rim of plate, use fingers dusted with Bisquick.

  5. Flute edge if desired.

  6. Freeze 15 minutes.

  7. Bake 8 to 10 minutes or until light golden brown.

  8. Cool completely on wire rack, about 30 minutes.

  9. Beat milk and lime juice in large bowl with electric mixer on medium speed until smooth and thickened.

  10. Fold in whipped topping and lime peel.

  11. Spoon into pie crust.

  12. Cover and refrigerate about 2 hours or until set.

  13. Garnish with lime slices.

  14. Store covered in refrigerator.
