Carrot Soup

Ingredients

  • Carrots, 5-6 thinly sliced
  • Celery, 1-2 stalks thinly sliced
  • Onion, 1 medium thinly sliced
  • Salt
  • Thyme
  • Butter (optional) 2 Tbsp
  • Pepper to taste
  • Broth - enough to cover everything in crock pot
  • 1/4 cup rice

Directions

  1. Put everything in crockpot except butter.

  2. Cook on low 6 to 8 hours.

  3. Put mixture in blender and blend until smooth.

  4. Salt and pepper to taste.

  5. Stir in butter at end (optional).

  6. May serve with sour cream on each serving.
