Snow-Topped Mint Bars

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour, divided
  • 1/2 cup milk
  • 1/3 cup crushed peppermint candy or candy canes
  • Confectioners’ sugar

Directions

  1. Preheat oven to 375 degrees. Grease and flour a 9- by 13-inch baking pan.

  2. Cream butter and sugar until light colored and fluffy.

  3. Beat in egg and vanilla.

  4. Add 1 cup flour, mix well, then add milk. Incorporate remaining cup of flour.

  5. Beat well for 2 to 3 minutes.

  6. Stir in crushed peppermint and pour into prepared pan.

  7. Bake in center of oven 20 to 25 minutes.

  8. Cool completely, then sprinkle with confectioners’ sugar.

  9. Cut into bars.
