italian skewers

Ingredients

  • 1 8oz block mozzarella cheese
  • 16 4 in genoa salami slices
  • 1 14 oz can of artichoke hearts
  • 1 pt grape or cherry tomatoes
  • 16 wooden skewers
  • 1 bottle of balsamic vinagarette
  • 1 T fresh lemon juice

Directions

  1. cut cheese into 16 cubes

  2. wrap salami slices around cheese cubes

  3. thread cubes, artichoke hearts, and tomatoes alternately on the skewers

  4. place skewers in a large plastic container or baking dish

  5. stir together dressing and lemon juice and poor over skewers

  6. chill for 8 hours

  7. remove from marinade before serving
