Tortilla Soup

Ingredients

  • 1 cup onions, chopped
  • 1 clove of garlic, minced
  • 5 cups of chicken broth
  • 1 14 oz. can of diced tomatoes, drained
  • 1 jalepeno, seeded and quartered
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1 1/2 teaspoons of salt
  • dash of pepper
  • 6 small corn tortillas
  • 1/2 cup of montery jack cheese
  • 1/2 cup of cheddar cheese

Directions

  1. Sautee first three ingredients with 2 tablespoons of chicken broth for 5 minutes.

  2. Add the rest of the ingredients down to the pepper.

  3. Boil for 12 minutes, then add tortillas and boil 5 more minutes.

  4. Turn off and let sit for a few minutes.

  5. Add cheese to bowls before serving.
