Aromatic Almond Elixir

This Asian-influenced concoction is sublime with Mediterranean-style grain dishes, like rice or couscous with pistachios, roasted red peppers, and preserved lemon.

Ingredients
- 2 cups fresh pineapple, roughly chopped
- 1 quart almond milk
- Juice and zest of 1 lime
- 1/2 lemongrass stick, crushed
- Mint leaves, about a dozen
- 1 (14-ounce) can sweetened condensed milk
Directions

Blend together all ingredients except condensed milk.

Add condensed milk, a spoonful at a time, until desired sweetness is achieved.

Strain through a fine sieve.

Serve chilled in a highball glass.
