Teriaki Chicken Kabobs

Ingredients

  • Marinade
  • 1/3 Cup lemon juice
  • 1/4 cup butter, melted
  • 1/4 cup soy sauce
  • 2 tablespoons firmly packed brown sugar
  • 1/2 teaspoon pepper
  • 3 tablespoons ketchup
  • 1 teaspoon finely chopped garlic
  • Kabobs
  • 1 pound chicken cut in to(24) 1 inch pieces
  • 8 1 inch pineapple chunks
  • 8 cherry tomatoes
  • 1 small green pepper (8) 1 inch pieces
  • 1 zucchini cut in to (8) 1 inch pieces

Directions

  1. Combine all marinade ingredients in large resealable plastic food bag. Reserves 2 tablespoons Marinade. Add chicken pieces to marinade in bag; tightly seal bag. turn bag several times to coat chicken; place bag in 13X 9 inch pan. Refrigerate, turning occasionally, at least 3 hours or overnight.

  2. Heat gas grill on medium. Remove chicken from marinade with slotted spoon; discard marinade from bag.

  3. Assemble kabobs

  4. Grill kabobs turnign and brushing with reserved marinade for 15 to 20 min or until juices run clear.
