Gołąbki aka: stuffed cabbage

Ingredients

  • Large pot w/ about 10 or so cups of water (you will be parboiling a head of cabbage for the leaves)
  • 20 cabbage leaves (1 large or 2 med. heads of cabbage)
  • 1 # ground lamb
  • 1 # lean ground beef (like ground round)
  • 1 C cooked rice (white or brown, you pick), parboiled.
  • 2 eggs
  • 1 tsp salt
  • 2 tsp sweet paprika
  • 1/2 tsp pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp nutmeg or mace
  • 1/2 tsp cinnamon
  • 1 C chopped parsley
  • 1 C chopped onion, divided
  • 1/4 C of prepared sauce
  • 1/4 C shredded carrot or chopped mushrooms -optional
  • SAUCE:
  • 2 - 6 oz can tomato paste
  • 1 C water from boiling the cabbage (maybe 1.5 if you like 'gravy')
  • 2 or 3 T brown sugar
  • 1 T Worcestershire Sauce
  • 1/4 tsp salt (or a tad more)
  • 1/2 C sauerkraut

Directions

  1. Cut around the core of the cabbage. It will make it easier to get the leaves off. (See the first video listed.)

  2. Boil water in deep stockpot. Remove stockpot from heat and put the cabbage in the pot for about 5-8 min. until leaves start to soften. Carefully pull out, letting it drain. Pull off up to about 20 leaves. You will need to pull a few at a time. Leave the cabbage in to be able to remove more leaves.

  3. (However much cabbage is left, chop up and put in crockpot with the sauerkraut)

  4. While cabbage leaves are cooling, saute’ the onions, garlic and spices/seasonings. Allow to cool.

  5. Make Sauce and set aside.

  6. Combine meat, rice, and cooled onion/seasoning/spices, eggs & 1/4 C of sauce.

  7. In crockpot, put 1/2 C of sauce and the 1/2 sauerkraut.

  8. lls: Place about 2 T of mixture on each leaf. Roll up firmly and place seam side down in the crockpot (or pin with toothpick.) Note: you may also use a lasagna pan and cook in oven for 1.5 hours @ 350 degrees F.

  9. Pour sauce over the rolls. Opt: you can cover these with leftover large outer leaves from cabbage that weren’t good for rolling.

  10. Cover, cook on low for 6-8 hours.

  11. You can serve this over rice or just on dish with veggies and salad. :)
