Cream of Broccoli Soup

Ingredients
- 1 TB butter
- 2 TB chopped onion (optional)
- 1 141/2 oz can chicken broth
- 1C heavy cream (not whipping)
- 1lb chopped broccoli florets ( fresh or frozen)
- corn starch to thicken
- salt & pepper to taste
Directions

In a 3 qt heavy saucepan, saute onions in butter ( if omitting onion, keep butter) over low heat until softened but NOT brown.

Add chicken broth and bring to a boil. Add broccoli and heat thru. If using frozen broccoli, cook them in micro until soft.

Add cream and heat but DO NOT boil. Sprinkle cornstarch until the consistency you like.

Salt and pepper to taste.
