Ham and Lentil Soup

Ingredients

  • 1 1/2 C. dried green lentils (or 1 lb package)
  • 1 C. chopped celery
  • 1 C. chopped carrots
  • 3 tsp. minced fresh garlic
  • 1 tsp. garlic powder
  • 1 1/2 C. diced ham or ham hocks
  • 1/2 small onion
  • 3 tbs. chopped fresh basil to taste
  • 3/4 tsp dried tyme
  • 1 bay leaf
  • 1/4 tsp. freshly ground black pepper
  • 4 C. chicken broth
  • 1 28 oz can diced tomatoes with liquid
  • 1 tbsp. balsamic vinegar
  • 2 ham hocks

Directions

  1. Sort and rinse lentils well. Place all ingredients into 4 quart crock pot stirring to combine. Cover and cook on low 4-6 hours or longer (up to 8 hours) if desired. Soup will thicken the longer it cooks. Remove bay leaf and ham hock prior to serving.
