Ingredients
- 1 1/2 C. dried green lentils (or 1 lb package)
- 1 C. chopped celery
- 1 C. chopped carrots
- 3 tsp. minced fresh garlic
- 1 tsp. garlic powder
- 1 1/2 C. diced ham or ham hocks
- 1/2 small onion
- 3 tbs. chopped fresh basil to taste
- 3/4 tsp dried tyme
- 1 bay leaf
- 1/4 tsp. freshly ground black pepper
- 4 C. chicken broth
- 1 28 oz can diced tomatoes with liquid
- 1 tbsp. balsamic vinegar
- 2 ham hocks
Directions

Sort and rinse lentils well. Place all ingredients into 4 quart crock pot stirring to combine. Cover and cook on low 4-6 hours or longer (up to 8 hours) if desired. Soup will thicken the longer it cooks. Remove bay leaf and ham hock prior to serving.
