Velveeta Mexican Dish

Ingredients

  • 1 lb. ground beef
  • 2 cups uncooked elbow macaroni
  • 1-1/2 cups chunky salsa
  • 1/2 lb. Velveeta cheese
  • 2 cups corn
  • 1/4 tsp. ground cumin

Directions

  1. Cook ground beef in large skillet on medium heat until cooked through. Dain if needed.

  2. Add 1-1/2 cups salsa and 2 cups water.

  3. Brng to boil and stir in macaroni.

  4. Reduce heat to medium-low; cover with tight-fitting lid.

  5. Simmer 10-12 minutes or until macaroni is tender.

  6. Add cut-up Velveeta and frozen corn and cumin.

  7. Cook until Velveeta is completely melted and vegetables are heated through. Stir frequently.

  8. Let stand 5 minutes before serving.
