Crunchy Corn Salad

Ingredients

  • 2 cans
  • (15.25 ounces) yellow whole-kernel corn, drained
  • 2 cans (11 ounces) white whole-kernel corn, drained
  • 2 medium cucumbers, seeded and chopped
  • 3 plum tomatoes or 1 large tomato, seeded and chopped
  • 1/2 cup sliced green onions
  • 2/3 cup mayonnaise
  • 1 1/2 teaspoons minced garlic
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt

Directions

  1. In a large bowl combine yellow corn, white corn, cucumbers, tomatoes, and green onions.

  2. In a small bowl combine mayonnaise, garlic, pepper and salt. Add to corn mixture; gently toss to combine.

  3. Cover and chill 1 to 3 hours.

  4. Toss again before serving.
