Cape COd Chopped Salad

Ingredients
- 8 ounces thick cut bacon
- 8 ounces baby arugula
- 1 large Granny Smith apple, diced
- 1/2 c. toasted walnut halves, chopped
- 1/2 c. cranberries
- dressing:
- 3 T apple cider vinegar
- 1 tsp. grated orange zest
- 2 T. fresh squeezed orange juice
- 2 1/2 tsp. Dijon mustard
- 2 T. pure maple syrup
- salt
- 1/2 tsp. ground black pepper
- 2/3 c. olive oil
Directions

preheat oven 400

roast bacon on a sheet pan 20 minutes

Toss together the arugula, apple, walnuts cranberries and blue cheese

Dressing: whisk together all ingredients

Chop bacon in large pieces and add to the salad, toss with enough dressing to moisten. Sprinkle with salt and serve immediately
