Simply Vichy for Four

Ingredients

  • 3 large potatoes
  • 1 pound pearl onions
  • 1/2 cup plain fat-free yogurt
  • 1 teaspoon white pepper
  • Shredded Cheddar cheese (optional)
  • Sliced green onion (optional)

Directions

  1. Peel and quarter potatoes; set aside.

  2. Cook onions in boiling water for 20 seconds. Drain, remove, and plunge into ice water.

  3. Peel onions.

  4. Place potatoes and onions in a large saucepan.

  5. Add enough water to cover.

  6. Bring to boiling; reduce heat.

  7. Simmer, covered, about 25 minutes or until potatoes are tender.

  8. Drain.

  9. Place potatoes and onions, a portion at a time, in blender or food processor; blend until smooth.

  10. Transfer to large bowl.

  11. Stir in yogurt and pepper.

  12. Add salt to taste.

  13. Cover and refrigerate until well chilled.

  14. Serve in bowls; sprinkle with cheese and green onion, if desired.
