Marinated Vegetable Salad

Ingredients
- 2 C fresh broccoli florets
- 2 C fresh cauliflowerets
- 1 medium cucumber, halved and thinly sliced
- 1 C sliced fresh mushrooms
- 1 C cherry tomatoes, halved
- 1/3 C finely chopped red onion
- 1/2 C fat-free Italian salad dressing
Directions

In a large bowl, combine the broccoli, cauliflower, cucumber, mushrooms, tomatoes and onion.

Add dressing and toss to coat. Cover and refrigerate for 8 hours or overnight.
