Ingredients
- 250g dried apricots
- 1 1/2 c plain yoghurt
- 2/3 c thickened cream
- 1/2 orange
- brown sugar or honey
Directions

Soak the apricots overnight in water, then simmer in the same water until tender.

Blend, using just enough water to make a thick puree.

Add yoghurt, cream and the zest of half an orange.

Sweeten to taste, then chill.
