Ingredients
- 2 egg whites
- 1/2 c caster sugar
- 60 g butter, melted and cooled
- 1 tsp vanilla
- 1 tsp coconut essence
- 1/2 c flour
- 1/2 c chredded cocnut, toasted
Directions

Oven 180C

Beat egg whites and sugar with a fork until smooth.

Add the cooled melted butter, vanilla and cocnut essences and flour. Stir until well combined

Spread 1/5th of the mixture onto lined baking trays, covering the whole surface of each tray.

Sprinkle with cocnut.

Bake 8-10 minutes, remove from the oven and allow to cool completely.

Repeat with remaining miture.

When cool, break into large pieces and store in airtight containers for up to 1 week.
