Carrot Cookies

Ingredients

  • 225g butter
  • 200g sugar
  • orange zest
  • 1 egg
  • 140g grated carrots
  • 335g four
  • 9 g baking powder
  • 1 g salt
  • 1 g cinnamon

Directions

  1. Oven 190C

  2. Cream butter and sugar until light and fluffy. Add egg and orange zest- stir.

  3. Sift flour, salt, BP and cinnamon. Add to the butter mixture alternately with carrots.

  4. Drop teaspoonfuls onto greased baking tray- they will spread during cooking

  5. Bake 12 minutes ntil lightly browned.
