Scotch Eggs

Ingredients

  • 500g sausage meat
  • 1 tbsp tomato sauce
  • 1 tsp worcestershire sauce
  • 1/2 tsp mixed herbs
  • 1/2 c soft breadcrumbs
  • 1/2 c dry breadcrumbs
  • 4 hardboiled eggs

Directions

  1. Mix meat, sauces, herbs and soft breadcrumbs. Divide into 4 equal portions.

  2. Sprinkle dry crumbs over paper. Flatten the meat into circles on the dry crumbs. Mould meat around each egg. Seal well. Coat in crumbs.

  3. Place on paper towels. Microwave on high, 6-8 minutes until sausage is cooked through.
