Sticky Orange and Vanilla Upside Down Cake

Ingredients

  • 4 eggs
  • 1 c caster sugar
  • 1 tsp vanilla
  • 1 c SR flour
  • 150g butter, melted
  • 1 c ground almonds
  • Topping- 1 c caster sugar
  • 1/2 c water
  • 1 vanilla bean, split
  • 2 oranges, thinly sliced

Directions

  1. Oven 160C

  2. Topping: place sugar, water and vanilla bean in a 10c nonstick frying pan over med. heat. Stir until sugar dissolves. Add oranges and simmer 10-15 minutes (until soft. Cool

  3. Whisk eggs, sugar and vanilla until thick, pale and 3x in volume.

  4. Sift flour over the egg mixture and fold through. Fold in butter and almond meal.

  5. Pour batter over oranges.

  6. Bake 40-45 minutes or until cooked

  7. Turn ou to sserve.
