Ingredients
- 6 eggs
- 1 c cream
- 1/3 c finely grated parmesan cheese
- 20g butter
- 2 tsp olive oil
- 400g fresh ricotta
- 1 c grated cheddar cheese
Directions

Whisk eggs, cream, parmesan, salt and pepper to combine.

Heat a 20cm nonstick frying panover low heat. Add butter and oil.

Add egg mixture and cook 5 minutes or until edges start to set.

Top with ricotta and cheddar, cook a further 15 mnutes or until egg is almost set.

Place under a preheated grill for 5 minutes ( the egg is set and top is golden).
