Cheddar-Corn Spoon Bread

Ingredients

  • 1 tbsp butter
  • 2 c milk
  • 1 1/2 c corn kernals
  • 2/3 c yelllow cornmeal
  • salt
  • pinch cayenne pepper
  • 1 c tasty cheddar cheese
  • 4 large eggs

Directions

  1. Oven 400F

  2. Butter a large casserole dish.

  3. In a pot combine milk, butter, corn, ccornmeal, 1 tsp salt and cayenne. Bring to a boil, reduced heat and simmer, stirring frquently, until slightly thickened (3-4 minutes). Remove from heat.

  4. Stir in cheese. Let cool until just warmto the touch (about 15 minutes). tir in egg yolks until combined.

  5. Beat egg whites and salt until soft peaks form. Stir 1/3 of the whites into the cheese mixture, then gently fold in the rest of the egg whites.

  6. Pour into prepared dish.

  7. Reduce oven heat to 160C; bake until browned on top, but slightly loose in the centre (25-30 minutes).

  8. Let cool 5 minutes before serving.
