Broccoli AND Cheese Quiche

(from receita’s recipe box)

always double and make 2!

Ingredients

  • Pie shell
  • 1/2 or more of frozen broccoli florets(chopped)
  • 1 cup grated cheddar cheese
  • 1 cup grated parmesan cheese
  • 1/4 finely chopped onion
  • 3 eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • pinch of black pepper

Directions

  1. Preheat oven to 425

  2. Bake pie shell for 5 minutes, remove from oven and set aside.

  3. Reduce temp to 375

  4. Prepare broccoli (steam) and chop

  5. Sprinkle 1 cup of cheddar over pie shell

  6. Top with broccoli and onion

  7. Beat eggs in a small bowl until blended

  8. Stir in milk, salt and pepper

  9. Pour over broccoli/onion

  10. Sprinkle remaining cheese(parmesan)

  11. Cover edge of pie shell with aluminum foil to keep from burning

  12. Bake for 25 minutes.
