Crispy Chicken with Citrus Soy Dressing

Ingredients

  • 1/2 c flour
  • 6 chicken thigh fillets, fat trimmed
  • 2 tbsp oil
  • Rice, to serve
  • 2 tbsp finely chopped chives
  • Citrus Soy Dressing:
  • 2 tbsp mirin
  • 1 tbsp lemon juice
  • 1 tsp freshly grated ginger
  • 1 tsp caster sugar
  • 1/4 c soy sauce

Directions

  1. Coat chicken with flour, shake off excess.

  2. Bake in oven until crispy and cooked through. Rest 5 minutes, then slice thickly.

  3. Drizzle with soy citrus dressing.
