Ingredients
- 250g butter, at room temperature
- 2/3 c caster sugar
- 1 tsp vanilla
- 1 3/4 c flour
- 1/2 c rice flour
- 60g butter, at room temperature
- 1 c icing sugar, plus extra (to dust
- 2 tbsp passionfruit pulp
Directions

Preheat oven 150C (130C fan forced).

Cream butter and sugar, stir in vanilla.

Sift flours over butter, stir to combine.

Knead dough on a floured surface, Roll dough into balls, place on trays, flatten sllightly with a fork.

Bake for 12-15 minutes or until slightly browned underneath.

Cool completely.

Beat butter until creamy, add 1/3c sugar at a tme until well combined. Stir in passionfruit pulp. Sandwich mixture between biscuits.

Dust with extra icing sugar.
