Butterscotch Cream Pie

Ingredients
- 3 eggs, separated
- 1/3 cup flour
- 2 cups milk
- 1 teaspoon vanilla
- 1 cup brown sugar
- 1/2 teaspoon salt
- 3 tablespoons butter
- 1/8 teaspoon cream of tartar
Directions

Separate egg whites.

Beat yolks in small bowl near pan.

Combine brown sugar, flour and salt in medium size pan.

In microwave, scald milk for 3 minutes, add to dry ingredients in pan.

Cook over medium heat stirring constantly till boiling, boil 2 minutes.

Pour a little hot mixture into egg yolks, whip, and mix back into pan.

Cook 1 minute.

Take off heat, add butter and vanilla.

Let sit a little before adding to cooked pie shell.

Whip egg whites with cream of tartar and 6 tablespoons sugar, adding a little at a time.

Beat till stiff.

Spread over pie filling.

Brown in oven.
