Butterscotch Cream Pie

Ingredients

  • 3 eggs, separated
  • 1/3 cup flour
  • 2 cups milk
  • 1 teaspoon vanilla
  • 1 cup brown sugar
  • 1/2 teaspoon salt
  • 3 tablespoons butter
  • 1/8 teaspoon cream of tartar

Directions

  1. Separate egg whites.

  2. Beat yolks in small bowl near pan.

  3. Combine brown sugar, flour and salt in medium size pan.

  4. In microwave, scald milk for 3 minutes, add to dry ingredients in pan.

  5. Cook over medium heat stirring constantly till boiling, boil 2 minutes.

  6. Pour a little hot mixture into egg yolks, whip, and mix back into pan.

  7. Cook 1 minute.

  8. Take off heat, add butter and vanilla.

  9. Let sit a little before adding to cooked pie shell.

  10. Whip egg whites with cream of tartar and 6 tablespoons sugar, adding a little at a time.

  11. Beat till stiff.

  12. Spread over pie filling.

  13. Brown in oven.
