stuffed cabbage

Ingredients
- -2 cups quinoa (uncooked)
- -4 cups kale
- -1 can chickpeas
- -3/4 cup lemon juice (about 1 whole lemon)
- -1/4 cup olive oil
- -3 teaspoons of garlic or to taste (about 3 cloves)
- -chipotle peppers to taste
- -salt and pepper to taste
- -tomato sauce
- -Parmesan cheese to taste
- -1 head of cabbage (or other dark green - kale, chard, etc.)
Directions

mix the first set of ingredients together. set aside.

-bring pot of water to boil

-get bowl of ice water
-
-place cabbage leaves 2-3 at a time into boiling water for 1 minute, then submerge in ice water
-
-cut thick parts of spine off leaves so they are easier to bend
-
-spoon filling into leaves, wrap, and place in casserole dish
-
-pour tomato sauce over top
-
-sprinkle with Parmesan cheese to taste

-bake until warmed through and “cooked looking” on top – about 20 minutes
