Lentil Joes

Serves 8 people

Ingredients

  • 2 tso olive oil
  • 1 medium yellow onion diced
  • 1 green pepper diced
  • 3 cloves garlic minced
  • 3 cups of cooked lentils
  • 2 tbsp chili powder
  • 2 tsp oregano
  • a pinch of cayene pepper
  • 2 cups crushed tomatoes
  • 1/4 c tomato paste
  • 3 tbs sf maple syrup
  • 2 tbsp yellow mustard

Directions

  1. Heat oil in a large non stick skillet over medium high heat. Add teh onion and pepper and saute for about 8 minutes or until softened. Add the garlic and saute another couple of minutes. Add the cooked lentils, chili powder, oregano and pepper. Season with salt and pepper then stir in tomatoes and paste. Cook for another 10 min or so. Stir in maple syrup and mustard and cook another 2 minutes.
